I had shared a recipe of cooking caulifower curry aka The Golden Cauliflowers long time back .
I get fedup of preparing some things the same way and thats when, I remembered this curry recipe my mom used to cook sometimes.
The spicy greens is a mix of spinach, green chillies, coriander, ginger, garlic and cumin. I have blended all these and then cooked cauliflower in it. Making a rough puree of it just speeds up the roasting process but, if you want you can just chop them and use it.
After pureeing it, cooking with cauliflower is just very simple, just the tadka with mustard seeds then goes the onions ,potatoes and finally cauliflowers..N cook. Well if you feel mustard seeds are like some gnarly bits in your dish… thats the face my kiddo makes on seeing these small balls – which she finds the most difficult part to eat ..(omg 😟kids and their food) but,… a mother never gives up..😊
Well, here’s my recipe for Cauliflower in Spicy Greens

Ingredients Used
2 cups Cauliflower florets
1/2 cup chopped potatoes
1/4 cup chopped onions
1/4 tsp asafoetida
1/4 tsp turmeric powder
1/4 tsp mustard seeds(optional)
salt to taste
1 tbsp oil for cooking
For Spicy greens:
A Handful of Spinach leaves
half handful coriander leaves
1-2 green chillies
1 inch ginger
3 garlic cloves
1/2 tsp cumin seeds
Puree the above ingredients in a blender
How I Prepared It?
Heat oil in a pan (I have used an aluminium kadhai). When oil is sufficiently hot add mustard seeds let it pop add asafoetida and then onions saute the onions till its translucent add turmeric powder then the pureed spicy greens saute it and add potatoes . Add little salt only for potatoes and cover and cook till the potatoes are half done. Then add cauliflower florets . Mix all and cover and cook till the cauliflowers are done.
I dried all the water content from my pot by cooking it without lid at the last stages.
And its done. Enjoy it with rice , chapathi or any other bread or just use it in sandwich.
