Citrusy and Delicious -Orange Cake


This delicious Orange Cake..another outcome of my recent baking…activities…

While I was baking this Orange Cake…my house smelled delicious and fresh.. of oranges:) It brought back some of my childhood memories.
I distinctly remember when my mother, would bake cake… the whole house would be smelling delicious..It was the home-made ghee which she would use for baking the cake…

I have prepared this cake in the same way, as learnt from my mother with slight modifications to the recipe 🙂

Ingredients Used?
110 gms self raising plain flour
1/2 tsp baking powder
1/4tsp salt
2 eggs
100gms granulated sugar
100gms butter (50gms of tub butter and 50gms of baking butter)
1 orange
 
 
How I Prepared It?
Preheat oven to 180 degree.
 
Line a rectangular baking tray with aluminium foil and set aside. I have used a 3X8 inch tray.
 
With a grater, zest the orange. Be sure to take off only the rind of the orange and not the bitter white part.
Then  squeeze out the juice from the orange and take 1/2 cup of the orange juice.Do not bother if you also get the pulp of the orange .Having the pulp also will give this cake more orangeyyy flavour…
 
Sift the flour along with baking powder and salt and set it aside.
 
With a hand mixer cream together butter and sugar and set aside.
With the hand mixer again, beat the eggs along with the orange rind, then add the orange juice.To this egg mixture add the butter and sugar mixture .Combine all of it well with the hand mixer.
 
Pour this mixture in the baking tray and bake for around 30-35 minutes.
 
Enjoy this tea time snack…Have it warm with your black teacoffee.
