A Simple and healthy meal – Carrot Rice.
I couldn’t resist serving it with an egg on it..It looked so lovely and the Carrot Rice was simply delicious..
Mixing all the healthy vegetables with rice is a very simple option I usually prefer for making a meal. Especially when you have a leftover rice kept in the refrigerator,…things get altogether more easy.
In India there are two varieties of carrot which you would see… one is the orange colour or as people say it carrot colour 😉 and the other one is the red colour carrot which comes only in winter. Those winter carrots are really sweet in taste. So, in winter a very famous(and also my favourite) sweet-dish is always prepared, called Gajar(carrot)-Ka-Halwa.
Of course Gajar-Ka-Halwa can be prepared with the orange carrots also but then.., you would not get the same sweetness from it.
There is also a Carrot pickle which I remember my mother used to prepare whenever the winter would come.This pickle would be stored in Jars (called -Burni’s in hindi). Wow… the colour of the pickle used to look lovely…

A Simple Carrot Rice
Equipment
- pan
Ingredients
- 1 cup cooked rice
- 2 carrots peeled and diced
- 2-3 whole dried red chillies
- 1/4 tsp asafoetida
- 1/2 tsp mustard seeds
- 1 tbsp oil for cooking
- 1 egg cooked sunny side up (optional)
Instructions
- Heat oil in a pan
- Add mustard seeds, dried red chillies and asafoetida
- Add carrot and salt. Mix them all and cover and cook till carrots are soft.
- Stir in the cooked rice. Again cover and cook till all the flavors have blended in for about 1 min.
- Serve with an egg on it.
Notes
Tip : The crackled mustard and the correctly fried red chillies along with asafoetida makes it delicious.
So simple, you see. It is my favourite too, I avoid the egg though.
