So.. I prepared this when there was a packet of baby spinach leaves in my refrigerator and, I didn’t want to eat it the original way or stir-fry or as salad…all when I imagined felt boring:(
So, I added egg to the routine spinach vegetable and some chilli flakes.Well I ended up adding a little more of the chillies than my taste-buds could resist.
Overall, it definitely was delicious.
This dish can be had as a healthy start of the day- as breakfast along with bread.
I enjoyed it with chapati for my lunch.

Ingredients used?
Packet of Baby Spinach
1 Egg
1 tbsp of Grated Cheese
Chilli Flakes
Dried Herbs-Oregano, Thyme
1 Tomato
1/2 of onion – chopped
Garlic
How I Prepared it?
Chop the Spinach leaves finely.
(If you have big spinach leaves, you can blanch and puree it and make this dish the same way below)
Heat some oil in a pan, add onion’s, some crushed garlic, dried oregano and thyme and some chopped tomato. Sautee all well and finally add the chopped spinach .Sprinkle some salt and chilli flakes.
After the water from spinach has evaporated add the cheese then bring together the spinach in the middle of the pan, break an egg on it. Season the egg with some salt and chilli flakes. Cover the pan and let it cook.
