Upma is a traditional Indian dish made of semolina and consumed mostly in South India and Maharashtra as breakfast.
Everyone in my family loves to have this delicious Upma especially for breakfast.
It is a savoury porridge made of semolina , which is sauteed alongwith the tadka either it can be made as plain or with vegetables and nuts like peanuts and cashewnuts. Either way it is delicious, healthy and one quick meal to make.
In my recipe I have used roasted semolina (which was readily available in the market) , added just one vegetable – carrot and cashewnuts.

Ingredients Used?
(Serves 2)
3/4 cup roasted semolina
1/2 cup chopped onions
1/2 cup chopped carrots
10-12 cahewnuts broken in pieces
Handful of chopped corinader stems and leaves
2 cups water
For Tadka
1 tbsp oil
1 tsp ghee
some mustard seeds
2 dried red chillies
1 small green chilly
1 tsp asafoetida
some curry leaves
1-2 tbsp ginger roughly chopped
How I Prepared It?
Heat oil in the pan . Add mustard seeds. After they have spluttered add curry leaves, red chillies, green chilly , asafoetida, ginger and cashewnuts. Saute them all till you get a lovely aroma from ginger.
Add onions, carrots and the coriander stems. Add some salt and cover and cook till the carrots are cooked. Then add semolina. Saute, add water and salt.
Cook it till the water evaporates . Turn off the heat while you still feel there is some moisture in it.
At this point add ghee. Garnish with coriander and serve.
