Stuffed Capsicums with Rice and Onion-Dill Leaves Bhajji(fritters)

It was good to have something different for dinner time..Changed the after office mood.
The lovely yellow and red colour’s of these vegetables helps to make a 🙁 to 🙂

 

At first I thought I would just chop the capsicums and stir fry it with cooked rice..This too is not a bad idea though..Then I called my hubby (who was at work) to check by when he would show his presence at home..and found out he was in a bad mood… hmmm:) I just remembered my after office days and felt myself to be really lucky to be on a break…

So…, my idea of stir frying capsicum with rice completely changed and I headed towards my kitchen with a different thought on combining these things together for the dinner plate.

 

 

 

 
 
 
 

Stuffed Capsicum with Rice and Onion-Dill Leaves Bhajji(fritters)

Equipment

  • Just one Pan (In this recipe I have prepared all in one pan only. First fried the bhajjis , then removed the oil and made the stuffing in the same pan and after stuffing the capsicums.. just heated the same pan …For me this saves time and I will not have to add more oil, cuts down my number of utensils from washing) Else you would need 3 pans

Ingredients
  

  • 1 and 1/2 cup Cooked rice
  • 2 capsicums one red one yellow
  • 1 medium sized onion chopped
  • 1 tsp ginger garlic paste
  • salt as per taste
  • red chilly powder as per taste
  • 1/4 tsp mustard seeds
  • oil for frying the fritters and for cooking

Onion-Dill Leaves Bhajji (Fritters)

  • 1/2 cup chickpea flour called 'Besan' in Hindi
  • Dill Leaves chopped Take a handful of it
  • 1 Big sized Onion chopped
  • 1/4 tsp turmeric powder
  • 1/4 tsp cumin powder
  • 1/4 tsp coriander powder
  • 1/2 tsp Butter
  • salt as per taste
  • red chilly powder as per taste

Instructions
 

Recipe of Onion-Dill Leaves Bhajji(Fritters)

  • Make a batter with the chickpea flour and water. Keep this batter as thick as possible initially.
  • Then add the onions, dill leaves, salt, red chilly powder, turmeric, coriander and cumin powder. Mix all well and set it aside.
    When we let this mixture stand for some time, the salt will remove the moisture from the onions and this will add more water to the batter …
  • In the meantime, cut the capsicums length wise with the green stem on it .Sprinkle some salt over it and set it aside.
  • I already had cooked rice in my refrigerator so I just heated it in a microwave.
  • Coming back to bhajjis(fritters), now add the butter to the batter and mix it . 
  • Heat oil in a pan for deep frying. 
  • After the oil has well heated, take a spoonful (1 tsp measure) of the batter and drop it in the oil for frying. Deep fry them . They should get a golden to light brown colour, which means it is done.
    Remove them on a paper and set aside.

For the Capsicum Stuffing

  • In another pan, heat just 1 tbsp of oil, add mustard seeds, let it crackle.
  • Then add onions and sprinkle some salt on it.
  • After it has become translucent add ginger-garlic paste and red chilly powder. Saute it.
    Mix in the cooked rice. 
  • Now simply crumble the Bhajji’s with your hands and mix it all. 
  • At this stage adjust the seasonings.
  • Then turn off the heat and keep this aside covered for some 5-10mins.
  • Stuff this in the capsicums.
  • Heat the pan and place the stuffed capsicums in the pan. Cover and let this cook on a very low flame till the capsicums have become tender. This will take take around 20mins to half an hour.
  • This Dish is Ready.
  • We enjoyed it with some tomato ketchup..
