Roast Chicken – The Indian Way …


My version of ‘Roast Chicken with a dash of wine’..served with the mash and tangy tomato salad…

With my love for cooking, accompanied with the love of eating something different..I prepared this.

When cooking at home I always prefer making my own ginger-garlic paste, my own garam-masala. And I always ensure that they really have a lovely aroma.

Recipe:

Ingredients Used?
One whole Chicken without skin
Onions- sliced
Red Wine

Chicken Marinade-
Turmeric
Salt 
Oil
Ginger-Garlic Paste
Red Chilli Powder
Garam Masala

For Mash-
Semolina
Salt
Sugar
nutmeg powder
cardamom powder
Butter
Milk

For the Salad-
Tomato
Fresh Coriander
Lemon
Salt & Sugar

How I Prepared it?
Roast Chicken:
Rub salt and turmeric with some oil and set aside for 15mins. Then mix together ginger garlic paste-red chilli powder- garam masala  apply this to the chicken and let it marinate for another 20mins.

In a baking dish, layer sliced onions, keep the chicken on it and cover it with aluminium foil and bake for half an hour on 180degree. Then remove the foil, cover the chicken with some more sliced onions on top , a little bit of oil and bake again for half an hour.
After it has been baked, remove from oven and pour some red wine over it while its hot. Let it rest for some time.

This way of baking chicken along-with the onion and red wine will give some delicious gravy to this Roast Chicken. 

Mash:
This is Nigella Lawson’s recipe of Mock Mash, from ‘Nigellissima’, a very simple way of making mash and tasted awesome…
Heat milk add some butter, when it boils add semolina, some nutmeg and cardamom powder, salt a bit of sugar and that’s it… 

Tangy Tomato Salad:
Chop tomatoes, finely chop coriander, mix with salt, sugar and some freshly squeezed lemon.

Plate them together, piece of chicken with its gravy, the mash and the salad. 
And Serve…
