Aubergine N Veggies Roast

There is one Baingan-ka-Bharta… Some call it Baba Ganoush .. I just added some more veggies along with Brinjal and with my lovely Indian Tadka to it, am sharing this is very simple recipe of my Aubergine N Veggies Roast .

Ingredients Used?
 
1 Brinjal
1 green capsicum
1 yellow capsicum
1 tomato
3-4 garlic cloves – chopped
3-4 sprigs of green onion – roughly chopped
a handful of green peas (optional)
 
1 tsp mustard seeds
1 tsp cumin seeds
14th tsp turmeric powder
red chilly powder as per taste
salt
oil
 
How I Prepared It?
 
Roast the Brinjal, green chillies, tomato and capsicums. Remove the skin of Brinjal, tomato and capsicums. Roughly chop them and also the green chillies.
 
Heat oil in a pan, add mustard seeds, cumin seeds let it splutter. Add garlic and green onions. Roast them for a while  and then add turmeric.
The oil should be sufficiently hot so that these initial flavours come out well. 
 
After this I have added some peas , Covered and cooked it.
 
Then just mix in all the roasted and chopped veggies with some red chilly powder and some salt.
Cover and cook (so that all the flavours blend well) on a low flame for around 5 mins..
 
This Sabji is ready to eat.
I yummed it with rice and dal tadka.
