Celebrations in our home calls for sweets like laddoos(check out my recipes of Nutriballs , Sesame seed laddoos) , jalebis , rice payasam, rabdi , rasagullas… But on birthdays we want cake / I want cake ..😃
This was not the first time I made a cake but the first time I made a cake alongwith its frosting just basic decorating the frosting with a spatula. I did miss out some points while applying the frosting in between the layers ..but thats ok .. finally at the end it made my day like WOW.
While making this cake I learnt- if you are a beginner in whipping up the frosting then do some armwork – whip it with your hand with a balloon whisk. You could see its texture at all stages . And the final stage when you see the soft peak hmm.. its amazing..
In the end the complete cake feels like an achievement. ✨
Inspired by the recipe of Chocolate spice cake from TasteofHome and of the frosting from passionforbaking , here’s the flavour from my kitchen of my All Spiced Up Chocolate Cake .

All Spiced Up Chocolate Cake
Equipment

Ingredients
For Cake
Wet Ingredients
- 1/3 cup butter I have used Land O Lakes salted butter
- 1 cup brown sugar
- 1 apple finely grated
- 4 tbsp maple syrup
- 1/2 cup coffee I made it with 1/2 tsp folgers classic roast instant coffee crystals with 1/2 cup water
- 2 eggs
Dry Ingredients
- 2 cups flour 1 cup all purpose flour with 1 cup whole wheat flour sifted together
- 1/4 cup cocoa powder I used Hersheys cocoa powder
- 11/2 tsp cinnamon powder
- 1 tsp all spice powder
- 1 tsp dry ginger powder
- 1/4 tsp clove powder
- 1 tsp baking soda
For Frosting
- 2 cups heavy whipping cream
Chocolate Spice Sauce
- 1/2 cup hersheys cocoa powder
- 80 ml coffee 1/2 of 2/3rd cup
- 1/2 cup brown sugar
- 2 tbsp honey
- 1 tbsp maple syrup
- a pinch of each clove powder, cinnamon powder, all spice powder, dry ginger powder
Instructions
For the Cake
- Sift all the dry ingredients and set it aside.
- Preheat oven to 350 F
- Using a flat wooden spoon cream butter and sugar until its blended.
- After its blended switch to a balloon whisk.
- Whisk in the eggs one at a time.
- Add the grated apple and coffee.
- Mix in the dry ingredients a little at a time.
- Divide this batter into 2 circular baking pans (5n 1/2 inch diameter and 2 inch height)
- Bake for 20 – 25 mins.
- When done – test by inserting a knife or toothpick it should come out clean. Remove from oven and let it cool.
For the Frosting
- Boil all the ingredients for the chocolate spice sauce till it bubbles for a minute.
- Remove from heat and let it cool.
- Then set aside in refrigerator.
- Take the heavy whipping cream with this chocolate spice sauce and using a balloon whisk and keeping it over an ice bath whip it till you get soft peaks.
- This process when done by hand took around 25 – 20mins . Remember do not overwhip.
- Done with this silky frosting just apply it on the cake the way you like it …Pipe it ..Just Spread it .. enjoy the delicious cake..
