This is a simple sandwich recipe and a fusion between pizza and sandwich . Even if I say pizza you need not start the oven just roast it on a pan (- cast iron’s the best) or use a sandwich maker. This recipe can be made with a minimum ingredient or you can increase the ingredient just like you increase your pizza toppings.
This easy and quick pizza sandwich will absolutely be loved by all.
I had some pizza sauce in the refrigerator and was wondering how do I have pizza without starting with the dough preparation for its base. So, the thought of using a bread and making a quick pizza sandwich with it dawned on. I have used just 2-3 vegetables – whichever was available in my fridge, you can use as many vegetables as you like – mushroom, cooked chicken and do not miss the pepperoni if you have them.

Quick Pizza Sandwich

Ingredients
- 2 slices bread
- 2 tbsp mozarella cheese
- 1 tbsp cheddar cheese
- 1 tsp olive oil
- 2 tbsp capsicum chopped
- 1 tsp green chilly chopped and deseeded
- 1 tbsp butter
- 1 tsp ghee clarified butter
- 2 tbsp pizza sauce I have used Classico Pizza Sauce
- 1 tbsp chopped red onions
- 2-3 tbsp chopped tomaoes
- salt n pepper
- 1/4 tsp chopped garlic
- 1/2 tsp Dried Italian seasoning
Instructions
- In a pan heat the olive oil add garlic and saute it.
- Then add all the vegetables except tomatoes starting with green chilly and onions. Saute them.
- Add the dried Italian seasoning. Remove this from heat and set aside.
- Toast the bread slices in a toaster just till they are firm.
- Apply butter to both the bread's insides.
- Then apply pizza sauce over it.Top up one slice with the cooked vegetables, tomatoes , cheese and season with salt and pepper.
- Cover with the other slice.
- Apply the clarified butter on its outsides and just roast this sandwich on a pan or sandwich maker.
- Slice them and enjoy.
