Healthful – BlueBerry Spiced Chocolate Bundt Cake

This one I had made for my Hubby’s Birthday. I inaugurated my new Bundt pan with this luscious cake. The Bundt pan just made the cake look more elegant and the Blueberry sauce poured over it just made my cake look more appealing.

I have always tried to make my homemade cakes for birthdays and celebrations as close to being as possible , sometimes exceptions did exist though. This Chocolate has been made up of flour & cocoa + sugar + eggs + oil + spices(always goes best with chocolate cakes). To make it wholesome I replaced some part of all purpose flour with ragi flour – made of foxtail millet and substituted some part of sugar with jaggery.

Spices are the most integral part of this cake. Alongwith with apple, orange rind and blueberry it takes the flavour of cocoa to a different level.

This cake is made simple by preparing the wet ingredients together step by step and then mixing them with dry ingredients. The Blueberry sauce in this recipe is made using whole milk. Full cream milk gave me the advantage to boil with cocoa for sometime till the milk had reduced as compared to using heavy whipping cream which cannot be boiled longer. Boiling with cocoa brings out the rich dark colour of chocolate .

Ingredients
  

For the Cake

  • 1 n 1/2 cup all purpose flour
  • 1/2 cup cocoa powder
  • 1/4 cup ragi flour
  • 1 cup sugar
  • 1 cup grated jaggery
  • 1/2 cup grated apple
  • 1 tbsp dry ginger powder
  • 1/2 tsp cinnamom powder
  • 2 pinch clove powder
  • 1 pinch all spice powder
  • 1 pinch nutmeg powder
  • 1/2 cup buttermilk
  • 1/2 of an orange rind grated
  • 4 eggs
  • 1 tbsp vanilla essence
  • 1 cup oil
  • 1/2 cup blueberries
  • 1 tsp baking soda
  • 1 n 1/2 tsp baking powder

For the Blueberry Chocolate Sauce

  • 1/2 cup blueberries
  • 1 cup full cream milk
  • 4 tbsp sugar
  • 1 tbsp cocoa powder
  • 1 tsp vanilla essence

Instructions
 

For Cake

  • Sift together the flours, cocoa powder, the spice powders, baking powder and baking soda. Set aside this mixture of dry ingredients.
  • Preheat oven to 350 degree
  • Apply oil or spray the Bundt pan
  • In a large bowl mix together eggs, sugar, jaggery powder and vanilla essence till well combined.
  • Add oil, buttermilk , grated apple, orange rind and mix well.
  • Part by part mix the dry ingredients.
  • Finally add Blueberries and pour in the Bundt pan.
  • Bake for around 35 mins( till a toothpick inserted comes out clean)
  • While the cake is baking ,prepare the sauce.
  • Once its baked remove from oven and let it cool in the pan for 10-15mins.
  • Then invert the cake on a wire rack and let it cool.

For the Blueberry Sauce

  • Boil milk.
  • Add sugar, cocoa powder and vanilla essence and boil for 5 mins.
  • Add blueberries and further boil for 2-3 mins and set aside to cool to room temperature.
  • Pour this sauce over the cake and serve.
